Almonds stuffed with nougat are a typical Spanish delicacy, especially popular during the Christmas holidays. This delicacy combines two traditional ingredients: the wafer and nougat.
Wafer: we make an almond based on Wafer where we introduce the filling.
Nougat filling: Nougat is a sweet made mainly from honey, sugar, egg white and almonds. It can be hard (Alicante type) or soft (Jijona type). For stuffed almonds, soft nougat is normally used, which has a creamier texture and is more suitable as a filling.
The preparation usually involves slightly hollowing out the inside of the almond to make room for the nougat. The almonds are then carefully filled with soft nougat, forming a delicious combination of flavors and textures. Sometimes, these filled almonds can also be covered in chocolate or dusted with icing sugar for an extra sweet touch.
