How to know the quality of a turron?

The importance of ingredients in the quality of the turron. A turron from jijona or alicante must not have preservatives or glucose syrup. Only almond, honey, sugar, egg white and unleavened bread.

Quality nougat has higher percentages of almonds and honey. The first ingredient should be almond.

While medium or low quality nougat has more sugar.

What are the varieties of nougat?

Turrón de Jijona is the best known and oldest nougat. Made with crushed almonds and honey, it is soft and can be enjoyed throughout the year in different dishes and celebrations.

Turron de Aicante is the hard version of turron de Jijona. Similar to nougat from Montélimar, this one normally has more almonds and less sugar than its French cousin.

The turron de Yema tostada or egg yolk nougat, was a very popular version 30 years ago. This version of turron was made with almonds and egg yolk. This nougat could remind us of a mixture of nougat and Catalan cream.

This nougat combines almond and pistachio. Its almond paste-like texture is perfect for pistachio lovers.

A completely different nougat. This Turron combines coconut from tropical regions with the know-how of the city of Jijona. A delight for coconut lovers.
