What we like most about turrón is obviously its taste. But what makes it even more captivating is its rich history. And this does not only concern classic varieties such as those from Jijona or Alicante. The same goes for other equally traditional versions, such as turrón with toasted egg yolk.

What is the origin of toasted egg yolk turrón?
Its origin remains unclear, surrounded by many legends. One of them says that this turrón comes from Catalonia, more precisely from a recipe inspired by Catalan cream. In the 19th century, a confectioner from Barcelona is said to have created this dessert for a practical reason: to use the egg yolks left over after making soft and hard turróns. As such, reuse is not a modern concept! According to legend, the artisan made a marzipan tablet, too wet, which he then caramelized with sugar to dry it, thus giving birth to the turrón with toasted egg yolk and its unique flavor.

Its rich and sweet flavor, obtained by slow and delicate pan-frying, combines wonderfully with a subtle hint of vanilla and a soothing aroma of pistachio.
