Turron d'Alicante is a variety of hard nougat, traditionally made in the province of Alicante, Spain. This type of nougat is characterized by its crunchy texture and its taste of almond and honey.

The main ingredients of Alicante Turron are as follows:

Whole almonds : Marcona almonds are generally used, which are of high quality and provide the characteristic taste and texture.
Honey : This is a key ingredient that provides sweetness and flavor.
Sugar : it complements the sweetness of honey.
Egg white : used as an emulsifier to bind ingredients together.
Wafer : A thin layer of wafer is sometimes used on the top and bottom of the nozzle to hold it together and make it easier to handle.


The preparation of “turrón de Alicante” consists of roasting almonds and mixing them with honey and sugar. The mixture is simmered until it reaches the right consistency, then the egg white is added to emulsify and ensure all the ingredients are well mixed. Finally, the mixture is poured into molds, left to cool and cut into blocks or bars.

Alicante nougat is particularly popular at Christmas in Spain and is known for its firm texture and sweet, crunchy taste. This nougat, like Jijona (soft) nougat, is one of the most traditional and emblematic of Spanish confectionery.
