This dry white wine is made from 100% organic Verdejo grapes which were grown out of a desire for sustainable and respectful management of the vineyard. The altitude (700 meters above sea level) at which the vines were planted gives the wine amazing freshness. A cold pre-fermentation maceration is carried out to allow greater release of the aromas of the Verdejo and 20% of the wine is aged in concrete vats with its own lees. This gives a significant aromatic palette to the wine.
