Pasteles de gloria are a traditional Spanish sweet, typically associated with Christmas. These pastries are made with a dough mainly composed of marzipan , filled with sweet potato. Marzipan is made from ground almonds and sugar, which gives it a smooth and sweet texture.
Glory cakes are often covered in a thin layer of icing sugar, giving them a characteristic white finish. They are popular in many parts of Spain, particularly in the south, and are part of Christmas sweet platters, which also include mantecados, polvorones and turrones.
The flavor of these cakes is soft, sweet and very characteristic thanks to the mixture of marzipan and sweet potato, which makes it a treat with a unique texture and flavor very appreciated during the end-of-year holidays.
Not to be confused with panallets, another traditional pastry typical of October-November in Catalonia and also containing sweet potato.
