Squid fritters (Calamares a la romana)

Ingredients for 4 persons :

  • Squid rings 800 gr.
  • Flour 200 g.
  • 1 and a half glass of hot water
  • 1/2 glass of sparkling water
  • 1 egg white
  • Olive oil
  • Salt pepper
    1. Put the flour in a bowl, add the salt, the pepper then the hot water and the sparkling water. Mix well. You should get a runny paste.
    2. Leave to rest for a few moments.
    3. Wash and dry the calamari rings. Heat olive oil in a fryer or skillet.
    4. Beat the egg white until stiff and add it to the batter, stirring carefully.
    5. Dip the squid rings one by one in the batter and fry them for about 5 minutes, turning them several times.
    6. As soon as they are golden, remove them and drain them on a sheet of absorbent paper.
    7. Serve with lemon wedges.
