Squid fritters (Calamares a la romana)
Ingredients for 4 persons :
- Squid rings 800 gr.
- Flour 200 g.
- 1 and a half glass of hot water
- 1/2 glass of sparkling water
- 1 egg white
- Olive oil
- Salt pepper
- Put the flour in a bowl, add the salt, the pepper then the hot water and the sparkling water. Mix well. You should get a runny paste.
- Leave to rest for a few moments.
- Wash and dry the calamari rings. Heat olive oil in a fryer or skillet.
- Beat the egg white until stiff and add it to the batter, stirring carefully.
- Dip the squid rings one by one in the batter and fry them for about 5 minutes, turning them several times.
- As soon as they are golden, remove them and drain them on a sheet of absorbent paper.
- Serve with lemon wedges.
