Chipirones Afogados
Ingredients for 4 persons :
- 1 kg of small squid,
- Onion 300 gr.
- 3 cloves of garlic
- 1 cayenne pepper
- Green pepper 50 gr.
- White wine 200ml.
- Olive oil 100ml
- Rum 25ml.
- 1 bay leaf
- 1 tablespoon chopped fresh parsley
- Salt
Preparation: Clean the baby squids and cut them into rings one centimeter thick (but they can be whole), salt them and set them aside. Cut the onion and green pepper into small pieces and the garlic into rings and sauté everything in oil for fifteen minutes over low heat. Add the chilli and bay leaf. Then add the rum and let it evaporate for three minutes, add the white wine and let it reduce again for four minutes. Add the baby squids to the pan, turn the heat up for a minute, then turn it down again and simmer for twenty-five minutes. Once the time has elapsed, sprinkle with the chopped fresh parsley.
