Escalivada of greenery

Ingredients for 4 persons)

  • 1 eggplant
  • 1 red pepper
  • 3 tomatoes
  • 3 onions
  • 1 clove of garlic
  • Olive oil
  • Salt

Difficulty: easy

  • Total time 80 mins.
  • Elaboration 10 min.
  • Cooking 70 mins.

  1. Turn on the oven at 180º.
  2. In a gratin dish put the eggplant, pepper, onions and garlic.
  3. Bake for 50 minutes.
  4. Remove the dish from the oven, add the tomatoes and bake for 20 more minutes.
  5. Take the dish out and let it cool for 15 minutes.
  6. Remove the skin from your vegetables.
  7. Cut into slices.
  8. Serve in a dish and add a drizzle of olive oil and salt.
