Bleached gofio

A very popular Spanish dish, this dish made with Gofio mixed with fish stock is an essential element in the culinary culture of the Canary Islands.

Ingredients for 4 persons :

  • Gofio (grilled corn flour) 200 gr.
  • Fish stock 200ml
  • Mint leaves


Preparation: Bring a pan of fish stock to a boil and when it comes to a boil, turn off the heat. Put the gofio and mint in a large bowl and add the broth little by little, stirring constantly to avoid lumps. When it is very thick and to our liking, we put the gofio into small pieces and decorate it with onion wedges or a little mint.
