Pil-pil cod
Ingredients for 4 persons :
- Desalted cod 800 gr.
- 4 garlic cloves
- 2 cups olive oil
- Ground pepper to taste
- salt to taste,
- Pour a cup of olive oil into a pan. Heat then add two cloves of minced garlic.
- As soon as the garlic begins to brown, remove the pan from the heat and let cool.
- In another skillet, pour the second cup of olive oil and fry the cod cut into pieces and the two remaining cloves of minced garlic, two minutes on each side.
- A kind of gelatin will ooze from the cod. Lower the heat and gradually pour in the cooled oil.
- Stir constantly, there should be no boiling.
- You should get a semi-white and creamy sauce. If it is too thick, add a little water. Salt very little and pepper before serving.
