Pil-pil cod

Ingredients for 4 persons :

  • Desalted cod 800 gr.
  • 4 garlic cloves
  • 2 cups olive oil
  • Ground pepper to taste
  • salt to taste,
    1. Pour a cup of olive oil into a pan. Heat then add two cloves of minced garlic.
    2. As soon as the garlic begins to brown, remove the pan from the heat and let cool.
    3. In another skillet, pour the second cup of olive oil and fry the cod cut into pieces and the two remaining cloves of minced garlic, two minutes on each side.
    4. A kind of gelatin will ooze from the cod. Lower the heat and gradually pour in the cooled oil.
    5. Stir constantly, there should be no boiling.
    6. You should get a semi-white and creamy sauce. If it is too thick, add a little water. Salt very little and pepper before serving.
