In Spain, it symbolises conviviality and is shared with family at the end of the Christmas meal, just like chocolate in France. Offering turrón to relatives or friends is one of the emblematic gestures of this festive period.

Turrón, or nougat in French, has its origins in Muslim cuisine, brought to Spain in the 8th century during the Muslim period of Spain. The techniques of preparing sweet doughs, mixed with local almonds and hazelnuts, gave birth to this delicious nougat. Traditionally made with orange blossom honey, cane sugar was gradually introduced for economic reasons, but the original recipe has remained faithful over the centuries.

Today, Jijona turrón is made using an ancestral method, the "Boixet", where the dough is emulsified in a cauldron using a mechanical pestle. This technique gives the turrón its incomparable smoothness. Turrón is much more than a simple confectionery: it is a gourmet heritage that perpetuates a thousand-year-old know-how.
